Culinary Arts
The Culinary Arts class studied sanitation the first two weeks
of school. Sanitation is vital to food safety in the food service
industry. We learned about cross-contamination, the temperature
danger zone and food borne illness.
We also studied what the health inspector looks for during their
inspection. We used a checklist to inspect several food vendors at
the Sandwich Fair. Some of the items we looked for were food
preparation practices, kitchen layout and equipment, receiving and
storage practices, and cooking and hot holding. All of the vendors
we inspected passed with flying colors.
